Le Moulin d'Opio
Located in Opio, 10 minutes from our gites www.locations-06.fr and our farmer-processor company www.terroir-06.fr.
For 7 generations, the Moulin d’Opio belonged to the Michel family. The wheel of the traditional mill powered by the water of the Brague turned quietly as time went by, until the day when Mr. Roger Michel inherited this business. He decided to shake up habits by installing a more productive traditional mill. When Roger Michel’s daughter, Christine took over this family business, she decided in turn to expand the mill with modern facilities.
Then this mill had to close.
After a two-year hiatus, the mill was bought by the Sophia-Antipolis Urban Community and reopens by appointment for the crushing of olives.
Thus, olives from small producers and individuals are pressed at the mill. Even from a very small quantity of olives, everyone can go there and leave with oil.
A certain quantity of olives is needed to have your “own” oil, otherwise the olive bringer leaves with a quota of oil weight.
Before, you could notice the installation of the shop in the old mill dating from the 15th century where you can admire the old stone presses as well as the old millstones once driven by wooden gears that have remained intact since their last use 2 centuries ago.

The Moulin Baussy, in Spéracedes
The modern mill has just turned a hundred years old and is located in Spéracèdes.
Yet it is at the cutting edge of progress: no more millstone, no more coconut scourtins stacked to filter the oil, no more press but a series of steel mixers that allow rapid production by centrifugation, in accordance with European standards. The mill operates from November to March.
Half of the processed fruits come from the Alpes-Maritimes, which has rich soils and trees several hundred years old.
But this department is too built and too steep to allow for an increase in the surface area of plantations.
The other half comes from the Var just next door, where the land would be better suited to vines but where large flat spaces make it possible to envisage new olive groves.
Everywhere, the owners are modernizing, ensuring better maintenance of the olive trees, installing drip irrigation.
The mill can be visited during the production period: from mid-November to mid-February as well as during the Open Day of the Mills.
Many products are sold there: oils, olives, soaps but this family does not produce olives.
There is a large choice of oils either from the region or from the European Union but always of good quality.

The Moulin Saint Anne, in Grasse
Located outside the town of Grasse towards the Var, it is a pretty mill which is 300 years old.
Several owners have succeeded one another.
Now this mill belongs to the group “A L’OLIVIER” and sells its products and those of the group via its shop and its website.
