The recipe for fougassette de Grasse, what is it?
It is a small oval-shaped brioche, a sweet Provencal bread about 5 centimeters thick with holes.
It’s an old and traditional gourmet recipe from Grasse which is one of our 13 desserts.
You can find savory fougasses: with olives, with cheese, with bacon… But we are going to focus on the typical “fougassette grassenc” that we love so much.
This fougassette was once given to the children of Grasse and Vallauris for a snack.
Nowadays you can find this wonderful fougassette in the real bakeries of Grasse, the most famous of which is Maison Venturini, a partner of Locations-06
The recipe for fougassette de Grasse
The ingredients for a successful “Fougassette de Grasse”
1 kg of t45 flour or oatmeal flour
1 glass olive oil
6 eggs
150g powdered sugar
20g fine salt
50g baker’s yeast
100g of orange blossom water
1.Mix 100g flour, oil, eggs, half a glass of lukewarm water and yeast and make a dough. Leave to rest for 3 hours.
2.Make a well with flour, oil, eggs, sugar, salt, orange blossom water and the dough. Knead well and leave to rest for an hour.
3. Spread the dough 4cm thick into an oval and make holes in it.
4.Bake in the oven at 180 degrees (thermostat 6) for 15 to 20 minutes.
