Nice olive oil and Cailletier olive tree

In our countryside surrounding our cottages we cultivate our cailletier olive trees with love and in a natural way.

These are large trees of which no one knows the exact age, except for those that we have planted ourselves, certainly at least 3 or 400 years old.
But we know that this culture has been established in our Alpes Maritimes department for more than 2 millennia, which gives this typical Mediterranean landscape with its terraces and olive trees.

We harvest the olives between November and February depending on their quantity, the weather and our availability.

Growing olive trees in the Alpes-Maritimes

The olives are rather green at the start of the season (which gives a fairly low oil yield: 12% and a very fruity taste) and at the end of the season rather black (yield of 18% max and oil with a mild flavor). But on closer inspection, we see that these olives often have several colors: black, purple, yellowish, green…

The Nice Olive, produced exclusively from cailletier olive trees, has been the subject of an AOP since 2005, after having been recognized as AOC.

But it is not enough to protect trees. You also need to feed them. Here again our approach is organic. After the olive harvest, we add olive pomace and then horse manure which we collect from nearby equestrian centers. Finally, during the summer we do one or two waterings.
And of course, we regularly prune our olive trees in order to maintain their beauty and remain productive.
Today, 99 municipalities in the Alpes-Maritimes are part of the territory of this AOP. But more than a geographical question, being part of the AOP requires respecting particularly strict specifications.
